This is great used either as a salad or a dressing
- l pound drained tofu, crumbled
- 2 tablespoons olive oil
- 1'1/2 teaspoons apple cider vinegar
- 1'1/2 teaspoons lemon juice
- 1 teaspoon sea salt (optional)
- 1 tablespoon chopped fresh parsley
- 1'1/2 teaspoon dried chives
- 1/4 teaspoon dill weed
- In a blender or food processor, blend ¼ cup of the tofu, olive oil, vinegar, lemon juice, and, if desired, sea salt.
- Place the remaining tofu, parsley, chives, and dill in a mixing bowl. Add the dressing and toss lightly. Use it as a sandwich spread or serve on a bed of lettuce and tomato as a salad.
